Ingredients
- 1 tablespoon oil
- 1 onion, chopped
- 1 green pepper, deseeded and sliced
- 1 can of gungo peas
- 1 can of coconut milk
- 125g rice
- sea salt and freshly ground black pepper
Method
- Heat the oil in a frying pan and fry the onions and green pepper for 5 minutes.
- Add the gungo peas, coconut milk and rice. Season with salt and pepper and simmer for 30 minutes or so, until the rice is tender, stirring occasionally.
- Serve with liberal amounts of hot Jamaican sauce.
