Rice And Peas Recipe

This Rice And Peas Recipe is a traditional West Indian dish consisting of rice and gungo peas. If you cannot find gungo peas in the supermarket, then black eyed peas are a suitable alternative.

Ingredients
  • 1 tablespoon oil
  • 1 onion, chopped
  • 1 green pepper, deseeded and sliced
  • 1 can of gungo peas
  • 1 can of coconut milk
  • 125g rice
  • sea salt and freshly ground black pepper
Method
  • Heat the oil in a frying pan and fry the onions and green pepper for 5 minutes.
  • Add the gungo peas, coconut milk and rice. Season with salt and pepper and simmer for 30 minutes or so, until the rice is tender, stirring occasionally.
  • Serve with liberal amounts of hot Jamaican sauce.
